You can and should walk every day. But if you do interval walking, as enough has described in her post, you will get much more of an aerobic cardio workout, and that's great. Twenty minutes of high intensity interval cardio is better than one hour of "speed walking" or jogging. Doing high intensity intervals every day causes your body to keep burning a more calories for several hours afterward, too.
So continue to do this every day if you wish, no need to take days off.
However, if you weight train, you should rest 48 hours after exercising a specific muscle group.
For example, beginners usually start off doing full body weight training three times a week. They follow a routine that works all muscle groups, with on or two days off between sessions. More advanced lifters, like CarolH, do split routines. They exercise the muscle groups in the upper body one day. The next day they do their lower body. Then it's one day off, and repeat the cycle. Some powerlifters and bodybuilders will workout every day, upper body, followed by lower body, the upper again with maybe one day a week off. All weight training works with doing your cardio EVERY DAY!
Weight training is much more taxing on your body, but if you really want to change your body, do cardio every day, lift weights every other day.
